Dinner time
We make pizza once every two weeks these days. We buy premised dough from Frys and really love it. Whenever we make pizza I always try to cook the dough during the day so that if I don't get to the toppings that's all we have to do--stuck em on and on broil for a few minutes. We have been trying to have easy and fast meals every night so that I can at least start it w Fred or Collin can cook it up really quickly. Basically our night goes...either we all get home at the same time or Collin gets home close to 6, make/eat dinner by 6:30/7, Hattie usually to bed by 7/7:30 and Fred starts bedtime stuff promptly at 8. Then one of us stays w Fred till he falls asleep (and usually falls asleep him/herself) and the other runs over to the gyms for an hour. Then we spend an hour/a few together and sleep! And wake up at 5:30!!! Sheesh. Some mornings I'm awake w Fred and others I sleep on the couch while he watches tv. I'm starting to feel less and less guilty about this. Oops. But anyway...meals have been simple and easy. And we have embraced the salad kit!!! Our frys carries 4-5 different types. Yes, it's $4 a bag. Yes. But this way we don't waste any, and we actually eat salad a ton now instead of buying all the stuff and being too lazy to prepare it or wasting a ton because we don't loooove salad leftovers. Anyway, its been awesome. We serve some to Fred and he never eats it but hey...they say one has to be served a food x amount of times before he'll like it right? Or try it? Ugh I hope someday.

A couple of weeks ago we took a trip to St George, Utah. Southern Utah was INCREDIBLE!!!! Freddie was so good the whole was there. He was super happy. We would sing and talk and look outside, and let him play with the tablet for a while to keep him happy. We also had an activity box with paper and a few colored pencils, some cars, books and other toys. It worked well. We also went over all the names of his little cousins that would be there. There were going to be 4 other boys all between the ages of 2-4.

More jumpin!!
We finally used up our gift certificate at Skyzone. Although the employees are insane, that place is awesome, and we love it. And hate it. And really love it.
LAST TIME and THE TIME BEFORE, Fred was fearless...but this time he was all WHAT THE bouncing floor?!?! But after a while and some good dancin tunes, he got comfortable and went for it.

amazing BBQ pizza!
The other night we made this delicious pizza! Here's the super easy recipe...

Get your favorite dough. Years ago we used to make our own, but we've found that lots of restaurants will sell you their dough for super cheap and that's a lot easier for us. When we lived in Provo we got it from Pizzeria 712 for like 2 bucks. That was amazing. Lately we have been using a really good whole wheat dough from Fresh and Easy that's under $1.50. Either way, grab your favorite dough.
Preheat your pizza stone in the oven at 550 degrees. You'll want to preheat it and then let it sit at that temp for at least 15 minutes to get nice and super hot. This will take a while. At some point sprinkle a little flour on the counter, take your dough out and let it rise on top of the flour for 20 minutes.
In the mean time, cook your chicken. We used boneless skinless chicken breasts, cut into pieces. Heat your skillet on the stove with a couple of tablespoons of olive oil. Cook the chicken for 3-5 minutes on each side, pour some BBQ Sauce in with it. Cut into the chn pieces to make sure they are cooked through. Set aside.
Roll out your dough; poke it with a fork a couple of times; rub it with some olive oil; sprinkle a little garlic powder around the crust. Then get it on your pizza stone and cook it for 6 minutes.
Chop up 1/4 to 1/2 of a sweet onion. When the dough is done, take it out, put on the onion, then the cooked chicken pieces, then pour a bunch more BBQ sauce all over and top with mozzarella cheese; be generous. Grind salt and pepper over the whole thing, then stick it in the oven again for about 5 minutes. Just watch it and when everything is melted, switch your oven to broil on high for just a few minutes till the cheese gets a little brown.
Take it out (turn everything off) and enjoy!!!!!!

and some delicious fragrance samples at our favorite
store, Sephora, got some fries at Five Guys, (where
Freddie spilled a whole cup of water in my lap, oh boy..)
and a few more adventures and stops on the way home.

Breakfast date with friends, Amanda and Preston, at LUX on Saturday. Love this place so much. I got a slice of quiche, SO good. and Collin got the MOST DELICIOUS biscuits and gravy I've ever eaten in my life.
THEN we went to an auction! So cool! just like in the movies. (it was our first time.)
Look what I made! DELICIOUS. Fresh and Easy pizza dough is the BEST. plus olive oil, shredded chicken, tomatoes, mozzarella cheese, italian seasoning, salt, pepper, onion powder, garlic powder. On a pizza stone in oven at 550 for 8 minutes. EASIEST thing ever.
